Recipe Makes 16 Cookie Sandwiches

Ingredients

Cookies:

1 Cup Granulated Sugar

1/2 Cup Unsalted Butter

1 Egg

2 Tablespoons Buttermilk

2 Tablespoons Red Food Coloring

1 1/2 Cups Flour

1/2 Teaspoon Baking Soda

1/2 Teaspoon Salt

2 Tablespoons Unsweetened Cocoa Powder

Cream Cheese Filling:

1 Package of Cream Cheese (8-Ounces)

1 Cup Powdered Sugar

1/4 Cup Butter

1/2 Teaspoon Vanilla Extract

Directions

Step 1: First, preheat the oven to 350 degrees.

Step 2: Mix together the sugar and butter in a large mixing bowl.

Step 3: Gradually mix in the egg, buttermilk, and vanilla extract and stir until thoroughly combined. Drop in the red food coloring and mix until color is evenly distributed.

Step 4: Using another bowl, mix together the flour, baking soda, salt, and unsweetened cocoa powder.

Step 5: Pour the flour mixture into the egg mixture and stir together.

Step 6: Roll the dough into small balls and place on a baking sheet 2 inches apart from one another. Bake them for 7-8 minutes.

Step 7: Set the cookies aside to cool.

Step 8: In the meantime, make the cream cheese filling. Using an electric hand mixer, mix together the cream cheese, powdered sugar, butter, and vanilla extract. Place the mixture inside of a piping bag.

Step 9: Carefully pipe the filling in between 2 cookies to make a sandwich. Continue until all cookies are used.

Step 10: Put the cookies in the fridge for 3 hours to set. Serve and enjoy!

Recipe Makes 36 Cookies

Ingredients

Cookies:

3/4 Cup Unsalted Butter

1 Cup Granulated Sugar

1 Large Egg

1 Teaspoon Vanilla Extract

1 1/2 Cups Flour

3/4 Cup Unsweetened Cocoa Powder

1 Teaspoon Baking Powder

1/8 Teaspoon Salt

White Coating:

Four 4-Ounce White Chocolate Baking Bars (Chopped Up)

1 Teaspoon Vegetable Oil

3/4 Teaspoon Peppermint Extract

5 Candy Canes (Crushed Up)

Directions

Step 1: On medium speed, mix together the butter and sugar until smooth.

Step 2: Add the egg and vanilla extract into the bowl and beat on high speed until mixed.

Step 3: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Then, using low speed, gradually mix the flour mixture into the egg mixture until combined.

Step 4: Cut the dough in half. Roll out both halves with a rolling pin dusted in cocoa powder. Roll it until the dough is 1/4-inch thick.

Step 5: Place the rolled out dough onto a baking sheet and place in the fridge for about 1 hour.

Step 6: After chilling for 1 hour, preheat the oven to 350 degrees.

Step 7: Cut the dough with a 2.5-inch circle cookie cutter and place the pieces onto a baking sheet with parchment paper.

Step 8: Bake in the oven for 10 minutes. Set them aside to cool.

Step 9: While the cookies are cooling, start to make the white chocolate coating.

Step 10: In a bowl, melt together the chopped up white chocolate with the vegetable oil in 15-second increments in the microwave. Keep stirring until smooth. Sir in peppermint extract until you reach your desired taste.

Step 11: Take each cookie and drop it into the white chocolate mixture. Use small tongs or a tool to evenly coat the cookie. Then, add the crushed up candy canes on top of each one.

Step 12: Place the coated cookies in the fridge for about 45 minutes. Serve and enjoy!

2 3/4 Cups Flour

Red Food Coloring

Holiday Colored Sprinkles

Directions

Step 1: Using a mixer, mix together the butter and sugar until you get a light and fluffy texture.

Step 2: Gradually mix in the eggs, vanilla extract, salt, and baking powder.

Step 3: Mix in flour 1 cup at a time until the whole mixture is fully combined.

Step 4: Cut the dough in half and keep one half in the mixing bowl. Drop in about 5 drops of red food coloring and mix together until the dough is completely red.

Step 5: Keep the uncolored dough and the red dough separate. Roll out each one into 9 x 16-inch rectangles. Place both in the fridge for 15-20 minutes.

Step 6: Carefully place the untinted dough rectangle on top of the red dough rectangle. Trim the sides until it is even all around. Slowly roll the dough into a tight log. Wrap it up in wax paper and place in the fridge for at least 2 hours. Note: You can also keep it in the fridge overnight.

Step 7: Pour the sprinkles onto a dish. Take the wax paper off the dough log and roll the dough log in the sprinkles until it is fully covered. Re-wrap in wax paper and put back in the fridge for 1-2 hours.

Step 8: After 1-2 hours, preheat the oven to 350 degrees.

Step 9: Take the wax paper off the dough. Carefully slice the dough into 1/4-inch slices. Place them on a lined baking sheet 1-2 inches apart from each other. Bake for 10 minutes.

Step 10: Serve and enjoy!


Raspberry and Almond Shortbread Thumbprints

Directions

Step 1: First, preheat the oven to 350 degrees.

Step 2: Mix butter and sugar together in a medium bowl until it’s a smooth consistency.

Step 3: In the same bowl, pour in the flour and the 1/2 teaspoon of almond extract. Mix together until it becomes dough.

Step 4: Create 1 1/2-inch dough balls and arrange them on cookie sheets.

Step 5: Using your thumb, push a small indentation into the middle of each ball. Then, place a small spoonful of the raspberry jam into each indentation.

Step 6: Bake in the oven for 14-18 minutes. The finished cookies should be slightly browned on the edges.

Step 7: It’s time to make the white drizzle. Mix up the confectioners’ sugar, the 3/4 teaspoon of almond extract, and 1 teaspoon of milk in a medium bowl. Once it’s a smooth consistency, carefully drizzle it over all of the cookies.

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

1/8 Teaspoon Nutmeg

1 Small Apple (Peeled, Cored, and Diced)

Cinnamon Sugar Mixture:

1/2 Cup Sugar

3 Tablespoons Cinnamon

Directions

Step 1: Preheat oven to 350 degrees.

Step 2: Using a mixer on medium-high speed, mix up the butter until smooth.

Step 3: Mix in the 2/3 cup of brown sugar and 2/3 cup of sugar into the butter until combined. Then, beat in the eggs.

Step 4: In another bowl, mix together the flour, cornstarch, baking soda, salt, and nutmeg.

Step 5: Gradually pour the flour mixture into the butter mixture and gently fold in until combined. Then, fold in the diced apple pieces.

Step 6: Roll the dough into small balls and coat them in the cinnamon sugar mixture.

Step 7: Place each dough ball onto a lined cookie sheet and push down on each one to slightly flatten them. Sprinkle extra cinnamon sugar on top of each one.

Step 8: Cook in the oven for 7 minutes, turn the pan around, and then cook for another 7 minutes. Note: The cookies are done when they are golden around the edges.

Step 9: Let the cookies cool before serving.
